Barrel fermented Chardonnay which slowly unfurls. Swirl the glass a few more times for it to reveal its true self.
This is a four barrel blend - one new, and the remainder a mix of 1 to 3 years. Two barrels were wild fermented and only two went through MLF. Nine months was spent on lees.
Lots to amuse and consider. Jersey caramel, buttercream, vanilla and melted butter. Squeezes of lemon with a lemon sherbet tang to finish and it's a finish which lingers long.
Drink now to eight years.
