Entrechat is a ballet step where the dancer leaps into the air rapidly crossing their legs behind. I tried it while tasting this wine - not a drop spilt! This is a traditional method sparkling made from Chardonnay and Pinot Noir sourced from the Canberra district.
Aged on lees for two years there's a lovely creamy mouthfeel. Soft biscuit and brioche notes lead to an ever so slight hint of strawberry with a poached apple and white stone fruit drive. Sift deeper to find some passion fruit and even a whisper of meringue. Wholemeal sourdough textural feels linger long. Neatly balanced, this is a most enjoyable wine and an ideal fizz to kick off a celebration.
