It opens with poached pear and perry like aromas. Golden apples and skinsy feels are as expected but there is a waxiness that catches me off guard. A faint lick of lemon curd chimes in before ginger nut biscuit and arrowroot biscuity texture go to work. Fine white pepper raises its head late and that pushes through to the finish that sits on the tail of ginger spices, but where's the mid-palate pleasure that was here a minute ago? Apart from the little bump in the road, this is a tidy drink.
