I get a sense this is a little further developed than hoped. Expecting firmer acidity for longevity, it has certainly slipped into some comfortable shoes rolling to just the other other side of the curve.
Smells of preserved lemons, lime pith, washed rind cheese with a unexpected nutty character. A bit flabby and loose to taste, it's still certainly a decent drink.
Long term cellaring isn't in the frame. I'd be drinking this in the next few years.
