Gee this is good. Really good.
Super fresh but I get a sense it's holding something back. It took about ten minutes for it to get comfortable and reveal its personality - not a bad thing I suppose.
Lemon grass, pineapple husk, honey dew melon and passionfruit. There's even a lick of cut apple to entertain.
Some textural interest in the mouth is a result of three months on lees - a neat touch. Cut herb chips away before another influx of citrusy goodness re-enters the fray.
Time to drink Aussie Sauv friends and this is a great place to get the party started.
