Dom Valentine is one of the Yarra Valley cool cats. Not afraid to push the boundaries, he's amassed quite the portfolio. This Greco is a thinker's wine. Smart gear, throw it at a degustation menu.
Made with fruit sourced from Heathcote, it was whole bunch pressed and fermented in barrel. Rounded with some generosity, it's ball of pleasure.
A glistening golden appearance comes with an effortless flow of white peach, quince, pears and almonds. A faint sheet of ginger lies across the top of a long and persistent finish. A wine that screams for degustation menus or to be poured by the glass at trendy bars, dive in. I'm taking that advice and leaping into a second glass right now.
