With a clenched-fist tension, this Syme Vineayard Pinot Noir from two mates, Matt Burton and Dylan McMahon, will continue to steadily morph into a delightful wine with more bottle age.
Tasted alongside the Lusatia Vineyard Pinot Noir, this was just that bit more coiled. Black cherries, plums and a hint of chocolate, earthiness, twigs and undergrowth muse with a fine dusting of spice. It certainly evolved more the longer it was open over a few days of tasting.
