Some Pet Nats are disgorged, others not so. This one has been, and as a result, it looks a lot cleaner with little to no sediment.
It's a Dolcetto and Chardonnay blend sourced from the King Valley and Alpine Valley respectively. Naturally, it smells of a ferment - it is a Pet Nat after all. Move past that and it veers close Rosé territory - underripe strawberries, red cherries, the white bit of the watermelon and red apples leaving a tart red apple finish. The fizz comes in good measure and good acidity cleanses the palate. Happiness in a bottle one could say.
