A wine built for thick cuts of protein cooked over open flames, this Parker Estate SBW is a rustic and muscular blend of 60-year-old Coonawarra Shiraz and 110-year-old Barossa Mataro.
Dense and compact, dark plums and blackberries sit at the core wrapped in puffs of earth and black tea. There is a savoury undertow that speaks of pan juices and char with meat rub spices weaving through. The tannins are drying and feel abrasive, leaving a dusty coating in the mouth. Not a wine for quiet contemplation, but it demands a plate beside it. Rib on the bone, or even lamb chops, will play an admirable supporting role.
