Picked, fermented and bottled all by July 2015, this Semillon has been deliberately held back five years before release. Those who enjoy the beauty of aged Semillon are in for a treat.
Wines like this a great simply because the temptation of opening the bottle from the cellar has been removed. Rip the top off and aromas of lemon butter, preserved lemon and almonds slowly reach for the sky. The aging process is underway with a slight oily and toasty characters beginning to show their hand. It's fat and generous through the mouth with those lemony bits coming back full circle on close. A very enjoyable wine which will age gracefully for at least another decade - if you can hold out.
