Busting out with hyperactivity, this GSM from Willow Bridge either needs to be medicated or you just need to apply some patience. I did the latter and it showed much better on day two of tasting.
It sees six months in seasoned French oak. Highlighted by aromas of raspberries, cherries and red apples, there is some depth in the flavour profile showing plums, dark chocolate, black earth and granite feels. It was tense initially with a lemony acidity, but that settles. A moreish length is laced with fine spices and a lick of char. Let it breathe and you have a tidy pizza and rib night wine.
