Wild yeast fermentation on skins took place. Full-time was called early to leave some residual sugar to deliver an off-dry finish.
Field flowers and green apples are the heroes with a lick of lime pith and a liberal squeeze of like juice taking a back seat. The sweetness and acidity are well-balanced and the texture built from time on skins gets a big tick from me. A great take on Semillon and one that opens the door to spicy foods.
