Destemmed, cold soaked for between 3 and 7 days with 30% of the blend undergoing carbonic maceration, it sees French oak (30% new) with some solids where wild yeast fermentation took place. After eleven months in barrel it was blended and bottled.
There is a vibe and an excitable presence that has me hooked. Red cherries and raspberries light things up from the get-go. Twigs, undergrowth, mushroom compost and sheets of fine spices fold into one another. A curious touch of pine needle even weaves its way through. Super fine with a dancy feel, it's just beautiful drinking.
