Wild fermented, 55% new French oak was used for 16 months.
Purple flowers led by violets, tar, dark plums and a multitude of black fruit. Cassis and black fruit fill the mouth with delicious savoury characters highlighted by dried sage, bay leaf and black olives. A faint mintiness takes a back seat with dark chocolate and a dusting of cocoa-like tannins is a perfect exit on a drying finish. This will live long.
