Fermented in oak and batch pressed, it opens with fleshy peach, hints of meringue, and a little flicker of pineapple adding lift. There’s a long, deliberate draw through the palate with a sheet of flavour that lingers with quiet confidence. Tasted with winemaker Marc van Halderen, it possesses a “chewy acidity,” as Marc puts it, which gives the wine shape and purpose. A subtle butterscotch note builds its way in as it breathes. Focused, textural and thoughtfully made, this is Chardonnay with poise and persistence.
