From the first whiff, the use of barrel fermentation is apparent. Sevens months of it in fact in old French oak.
You could look at this as a 'thinker's' version Sauvignon Blanc. There's certainly plenty of interest here - much more than the standard Sauv out there in retail land.
Custard like oak, cut herbs, and poached apple get things going. An inviting line of acid brings the varietal traits to the fore. A hint of tropical fruit lurks in the background but certainly doesn't sit front and centre like most Sauv Blancs. A lemony twist and spice tickle to finish of a wonderful take on the variety. More like this please.
Drink now to three years.
