Winemaker Matt Burton says this Wild Semillon is a "fresh, modern and exotic take on this classic Hunter Valley variety." He's not wrong.
Made from a few components including free run, barrel ferment and a portion on skins for four months, the aim is to build balance and texture.
Soft citrus fruit rolls along catching some lemon zest and drop or two of lime cordial along the way. A lick of sweetness lobs up late but I'm all here for the fine brush of chalky-like texture that just hangs. A wine of freshness yet delivering handfuls of interest, it's very well done.
