The top wine in the Paisley Wines stable sees 20 months in barrel (50% new French and American oak). A generous and wonderfully rounded Shiraz, there is some serious longevity in its veins.
Swirl the glass to reveal cloves, cardamom, sandalwood and cedar. Scents of char and the old Nikko pen make an appearance too before the latter blows off. Dense fruit and laced with sweet baking spices, it goes deep. A little warmth early but this calms with more air underneath its wings. Dark chocolate and dark berries gain momentum with a smidge of fruit cake. A comforting type, I just want to sip it all night. And perhaps I did.
