Clearly bursting with freshness, the cork couldn't wait to get out of the bottle quick enough. Only one of two Sparkling Vermentinos in Australia, this is a beauty.
The base wine was made with a little skin contact and 100% wild yeast fermentation in two-year-old French barrels. Six grams of residual sugar remain. A fraction sweeter than the last vintage, this 2017 is clean, fresh and very refreshing.
Some whiffs of elderflower before poached green apple and white flower scents step up. A touch of almond meal and a little biscuity lick flank the lemon sherbet and lemon juice washing through. The appearance of a lemony tang late calls you back. Crisp with a beautiful elegance probably sums it up best. Go here.
