Whistler Estate Shiraz Cabernet 2021

 

I find wines like this fascinating. Sure they'll live long, but the vibrancy and slurp factor now urge me to dive in with pike. Have one now and save one for later (much later) and you'll know what I mean. The fruit is just bristling at the moment. It's on the dance floor cutting moves and dragging everyone in - you can't help but want more. 

Plums and dark fruits are in control with a Cherry Ripe appeal. Fruit bun spices add a neat persona. A lick of creaminess comes to the fore too - milk chocolate like. A 75/25 blend of estate grown fruit, the Shiraz fills the mid-palate well as it pins itself down. That spice tickle seems forever and lingers much longer than expected - akin to that friend at a party that never leaves. But then I get caught up in the vortex of moreishness and go back once more to be held captive by the juiciness.

Yeah, I'm loving this now, but no doubt the savoury side will emerge with time. I'd be curious to see how it looks in five and ten years time, but I'm quite thrilled with what I have here.
