Winemaker Jacob Carter launched Sholto Wines in Canberra four years ago. A couple of samples from this small producer were welcomed and I like what I see. Carbonic maceration was used to create this Syrah made with a dollop of Viognier.
A more than pleasant drink, the fruit is concentrated on the mid-palate.
Black pepper, mushroom compost, aniseed, red fruit and red meat get my attention. Lemony acid stands up initially but this settled on day two of tasting. Some tension evident with some stemmy characters, there's plenty of satisfaction here.
Drink now to six years.
