The dux of the class. A superb rendition of Chardonnay.
First planted in 1992, the Wallis vineyard is also the flattest and lowest of the TMBT vineyards at 142m above.
Whole bunch pressed, wild yeast fermented, complete MLF and French oak for 11 months (25% new).
This oozes lemons, grapefruit tang, a rub of ginger spice with a creaminess that just rolls through the mouth effortlessly. A touch of butterscotch and fig add further pleasure. The clincher is the poise with which it carries itself - stunning. Stand and applaud.
Drink now to ten years.
