Whole bunch pressed to barrel, wild fermented, no MLF and sees nine months French oak (45% new).
A lemony tang courtesy of lemon sherbet sways throughout. Dehydrated pineapple, white fleshed nectarines, custard powder and ribbons of vanilla add detail. With a great length, it will only get better. Overall, it's just about there but I reckon a little more time will help it mesh together to get that rounder, more desired shape.
Drink to eight years.
