Moody and brooding, this Old Girl Shiraz from Macedon Ranges producer Paramoor was growing on me after every sip.
Hand-picked, 100% whole-bunch fermented, 100% wild-yeast fermented and matured for 12 months in French oak (20% new), it is made to up the interest factor. Make no mistake, that whole-bunch influence speaks loudly.
Tilled earth, stripped bark and tea tree aromas rise from the glass, joined by notes of charred steak and a dusting of peppery and exotic spices. The palate is firm and tension-filled, carrying a drying grip. As time goes on and over a few days of tasting, it unfurls, revealing greater harmony between its savoury, spicy and fruit-driven elements. Give it the time it deserves and you'll be rewarded.
