The first release of the Indomitus Citrea made with Riesling sourced from Canberra's Four Winds vineyard.
Wild fermented, on solids and in old oak with maturation for four months. No fining used.
There's certainly a skinsy and textural element to this wine. It leans itself more to partnering fine seafood dishes rather than dowsing the fire on a scorching day as you would with many other Rieslings. Lemon peel, cucumber and tonic before a squeeze of lime. The finish is long with a long chord of texture clutching on for dear life.
