Having witnessed Brad Hickey go about his work during vintage, his desire to let the fruit speak for itself is one of his core objectives. This carbonic Cabernet and Nero d'Avola is a vibe and an example of a little bit of creativity delivering excellent results.
Whole bunch Cabernet was submerged by Nero juice creating an environment for carbonic maceration to get to work. Those thousands of little ferments within the one big ferment bring seductive aromas and vibrancy to the wine. Tip this in the glass and pick up scents of capsicum and ripe raspberries. Some stemmy feels through the mouth before juicy blue fruits take hold. Delicious! A fine grip adds textural appeal, but the energy of this wine is what has me hooked. It's such a great slurp and oozes cool.
