The fruit was handpicked and destemmed before wild yeast fermentation took place. It saw 11 months in French oak (25% new).
Alive with a bright crimson hue, the energy it exudes cannot be denied. Drunken cherries, mulberries and squishy blueberries skip about urging you to dive in further. It shows some whole bunch characters but there is no whole bunches to be seen. Smoked hock, char and pan juices drive through. That smokiness screams a barbecued meat match - boneless beef ribs low and slow will do thanks very much. A fine thread of minerality pins itself to the core with peppered steak and green peppercorns having the last word. Long, rustic in part, it's just beautiful drinking.
