If you are looking to develop your taste, put of bottle of this beside the current release and you'll see two very different wines. And the difference has nothing to do with oak either. It's purely the Semillon variety developing slowly - not too dissimilar to the taste buds of consumers who slowly gravitate to wines with a little more age themselves.
Waxy with honeyed tones, lime juice and lime zest a prominent. There is a respectable width through the mouth that fills every crevice with ease. Some lemon balm raises its head with a lanolin theme, but the acid is still tense and pulls a tight rein. If anything, it shows that another decade is easily left in the bank.
