A riot of red cherries sprint from the glass. From Josef Chromy, is a classic example of Tasmanian Pinot Noir.
Absorb those gorgeous aromas but as the fruit hits the mouth it's shouldered out of the contest by the savoury profile. An earthy drive and woodsy spices lead the way with a negroni and orange peel thing, beets as well as some cured meat. Plum tried to forge a route forward but the savoury drive holds court finishing with dusty and drying tannins. This is a really good drink.
