The use of whole bunches (20-30%) along with some sun dried stems impart a lovely savoury character. Wild fermented before seeing French oak for ten months, expect cloves, dark berries and plums, some charcoal and aniseed which all add interest. Long through the mouth with great depth, the late arrival of choc dipped raspberries on a moreish delivery chime in well along with soft tannins. Tasty stuff.
