Made with 100% Chardonnay, The Fizz Pig from Strawhouse Wines draws plenty of crowd-pleasing appeal. I love the complexity that it delivers.
Baked nectarines, poached pears, cut apples, honeyed tones and even the suggestion of lemon myrtle muse adding interest, but it is the bready and sour dough like complexity that keeps me in the hunt. Fine beads of fizz are coupled with a fine mousse. A wine with a long lasting finish, an expressive lemony sherbet tang is the parting gift. As winemaker Justin Byrne says, this is ready for a good time not a long time.
