Sourced from growers across the district, density is the buzzword. Bacon hock and cedar show heavy oak impact and it is clear that this is not a wine made for now. Give it the time it deserves and it will step up and a few days of tasting proved this correct.
Generous with handfuls of plums, blackberries and dark cherries, the impact of cedar and sandalwood adds to the fruit cake and baking spices that speak very much of the region. Peel off a few more layers of interest to reveal pan juices and milk chocolate as Dutch cocoa tannins dry out ever so slowly. Tuck it away and let it gain some dust and you'll be rewarded.
