A blend of Pinot Noir and Chardonnay (56/44), it spends 24 months on lees and the extra time shines through adding polish and complexity.
Green apples, white flowers and elderflower provide an inviting aromatic lift before delicate notes of wafer biscuits, brioche and subtle biscuit characters emerge. Fine waves of white fleshed stonefruit roll through the palate, supported by a gentle green tea-like phenolic grip that adds texture and interest. Clean, crisp and beautifully composed, it carries itself with confidence without ever becoming showy. Everything feels neatly in place, making it dangerously easy to keep returning to the glass. A very tidy sparkling, this is an enthusiastic recommendation from me.
