A fabulous savoury drive is the highlight of this Montalto Merricks Pinot Noir.
Cold soaked for 3-7 days before wild fermentation. 30% underwent carbonic maceration for two weeks then pressed to French oak (30% new) where it spent eleven months.
Tilled earth, dried leaves, twigs, compost and super fine spices frame a delicate palate of dark plums, mulberries and an unmissable lick of dehydrated strawberry. Orange rind, cola and bitter dark chocolate add detail, but the length is undeniably magnificent. Sleek and silky, it rolls through with ease and just hangs leaving plenty to consider. Brilliant as you can expect from Simon Black.
