Thoughtful experimentation sums up the Indomitus range of wines from Gundog Estate. This Albus Semillon sits on skins for 175 days and is a blend of sites from the Upper Hunter and around Pokolbin.
Hunter Valley Semillon can reliably deliver bright lemons and green apples with fresh, zippy acidity, but this is a little more voluminous and showcases golden apple, pie apple, soft florals and a hint of elderflower. There is such a wonderful consistency through the palate that delivers a rounded presence. A green apple acid crunch cuts in late on close cleansing the mouth. A wine that needs food alongside it to shine, picnics and long table lunches are in its wheelhouse.
