60% of the fruit was destemmed and on skins for 12 hours with a portion seeing partial wild yeast fermentation before spending five months on lees in seasoned French oak.
Lemon juice with a limey tease, a flicker of golden apple raises its hand. Little white flowers swarm and deliver a pretty aroma that keeps calling you back. Wonderfully textural, that time in oak and on lees has built a most impressive mouth feel with a dangerously moreish lemon zest and curd delight throwing itself around your soul. Oh my this is good.
Drink now but this will age gracefully.
