Parker Estate Abbey Vineyard Cabernet Sauvignon 2021

Woah! A faceplant into a tray of slow-roasted capsicum sets the scene with this new Abbey Vineyard Cabernet from Parker Estate.

A rock solid Coonawarra Cabernet, it sees 40% new French oak barriques for 12 months. A curious fabric softener aroma ties itself to those varietal leafy Cabernet aromas, but they blow off soon enough. Blackberries come with the territory along with some boysenberries and mulberries. Bay leaf, dried thyme and sage add a fabulous herbal touch along with a fine shimmer of mint. It's a wine that dries out slowly but possesses a seductive 'come hither' call as it lures you closer. A mighty fine debut.
