The fruit sees old French oak for four months on lees, building a supreme complexity and textural detail. Poached pears, custard apple and golden apple shape up early before cinnamon and whisps of ginger spices draw concentric circles around the mouth. A touch of dried herb hitches a ride but I'm all in on that spice that builds interest and intrigue. A grapefruit tang cuts in on close and brings the mouth to water ever so slowly - beautiful. Sip slow and embrace. Great stuff!
