Every time I hear or see the word 'undercover' I think of Beverly Hills Cop and Axel Foley who was always 'deep, deep undercover'. Not shy or in hiding, this Pertatinga Shiraz is a good drink.
Dense, waves of dark chocolate, dark plums and dark berry fruit roll out. There is a little bit of charcoal rising to the surface too with time in the glass. Initially, it's quite firm but it settles but that clenched fist vibe needs patience. Chargrilled steak and a glass of this would do just fine.
