The best parcels of fruit from the Hilltops are kept aside to produce this Flintlock Shiraz. Made for the long term, this is a wine I'd like to see in a few years time.
Medium-bodied, dark plums and dark cherries mingle with pan juices and charcuterie board appeal. Give it some more air and cola steps in the frame with an earthy edge. Dried herbs and an array of spice cupboard delights continue to add layers of interest. Worth noting, only started to show its best after a few days of tasting. The acid was still firm and the finish brought a warmth with it. Time will be its friend.
