From 1998 planted vines, this Hutton Vale Farm Cabernet Sauvignon spends 19 months in French oak, 25% of which is new.
It's a wine of concentration and density highlighted by dark berry fruit and plums. Cabernet traits of leather and cigar box take a back seat with dark chocolate brownie and fruit bun spices prominent. Dried sage and cloves wriggle forward with time in the glass but what pulled it back was the caressing warmth that clings to the finish. Enjoy a glass or two alongside a slow cooked lamb shoulder and I suspect you wouldn't notice.
