Some wines leave an impression. This Will's Vineyard Pinot Noir from Paramoor had me circling back after tasting a flight of 18 others, and that probably says everything you need to know. This is excellent!
Paramoor Wines sits on 17 hectares of what was once a Clydesdale horse farm and this Pinot Noir carries itself with a confidence that belies any need for fanfare. Bright red cherries, drunken cherries and red plums rise from the glass, followed by puffs of earth, tea tree, mushroom compost and orange peel. An ever so faint touch of eucalypt quietly reminds you of its Australian roots. Aged for 12 months in French oak with a modest portion of new barrels (20%), the oak influence is neatly folded into the wine's fabric. The shape through the mouth is seductive and graceful, yet there's a concentration of flavour that draws your focus squarely onto the mid-palate. Delicate sheets of spice fan out across a persistent finish, carrying impressive detail and sophistication. Everything feels considered and beautifully executed. I could bathe in it. Big love!
