Six years already under its belt, and this Passel Estate Cabernet seems to have developed a touch more than I expected.
Blackberries and cassis still lead the charge, but there’s plenty of secondary character now creeping into the frame. Liquorice, dark chocolate and wallet leather, with bay leaf and a sprig of rosemary adding an earthy, savoury edge. The fruit has softened, the tannins have taken a step back and the wine has developed a little more maturity than I anticipated from this vintage. There’s still plenty to like here, but this is no longer a wine waiting for its moment. Tuck in now.
