Give this Aldersey Shiraz from Ivyburn a sleep. That lie down will do it the world of good. A generous wine with lots of chew, the acid was out of whack and didn't partner with the fruit. But all this changed on the second and third day of tasting.
Loaded with dark plums and berries, handfuls of dark chocolate, pan juices, beef stock and char play supporting roles. Sourced from the Blewitt Springs subregions I'm informed, it is quite drying. Once it calmed, it demonstrated a very different shade of its personality so give it that time. The longer it sat, a touch of coffee grounds and black earth shuffled forward with a veil of warming spices and baking spices to close. It's a good wine but there is a lack of detail about the vineyard, age of the vines, winemaking and oak. A bit of a head-scratcher.
