Give this Aristotle Shiraz from Paulmara Estates some time to open up and it shines like the wheels on a muscle car.
It sits neatly in the mould of a traditional Barossa Shiraz given its aroma and feel. Scents of church pew and chocolatey oak are wrapped up by fine baking spices. Seeing 100% new French and American oak for 19 months, cloves, licorice and sandalwood seep through its veins along with some vanilla. Dense, rich dark berries offer handfuls of pleasure. Sure there are other Barossans with more prestige but if old school charm is your bag, you won't miss here. The fruit was previously sold off to a prominent label but these wines won't be covered by a red sash any time soon. With time in the glass, there is a mood that builds evoking a nostalgic cigar club with big leather lounges. I can even see it as a prized wine at the end of a long lunch. Over a couple of days of tasting it opened wonderfully so a long decant before drinking now is recommended.
