I followed the instructions and served this slightly chilled - who says you can't drink red wine in summer? A juicy red fruit with a fine spritz, this is calling out for a charcuterie board or a pulled pork roll.

A blend of five varieties that saw carbonic maceration, the energy and vibrance that this technique brings to the fruit can be seen front and centre. Its skinsy detail isn't far from the action but it's abuzz with red apples, red plums, and a touch of blueberries building the fruit profile. Some black currant leaf, licorice bullets, burnt sage, tilled earth and a surprising cameo of cashews continue to add to the detail. A flirtatious cola streak rushes by late with dusty tannins sitting in the front palate. Definitely serve chilled and kick back to relax as you peel back the delight that follows.
