Grown 520m above on the outskirts of Mudgee, 30% of the fruit underwent wild yeast fermentation to build texture and interest before being blended back with the remaining portion.
I picked up a curious scent of banana lollies early on, but this blew off soon enough. Clean and crisp, things light up with pineapple sage, mango, lime juice and white-fleshed nectarines. A fine veneer of tonic-like texture is brushed through and the shimmer of river stone minerality tucks in behind, but the lights keep flashing with a lemon granita tang on close - yes! Super delicious for a sweltering day, this is a radiant delight.
