I could get comfortable with this Vinifera Organic Cabernet. Very comfortable. From the Mudgee region, it's a Cabernet that just keeps tapping on your shoulder asking questions and I'm more than happy to oblige.
Littered with savoury delight, think dried thyme and marjoram, tilled earth, the scent of church pews, and tomato bush. Dark fruits roll through the mouth gradually building its presence as it drip feeds interest. Sapping and drying on close, it's moreish and curious as it calls you closer. The tannins are moving to the powdery zone so you know something special is brewing. Decant well for now but give it the time it deserves. I'd love to see it again in a few years time. But for now, it's a great wine.
