This Hutton Vale Farm Cabernet is an excellent wine but it needs time to see it at its best. I came back to this after several hours in the glass and we were in business. A day on and it was even better. A keeper, tuck it away and you'll reap the rewards.
Initially tense and brutish, that time cooling its heals was the antidote required. It opened up furthermore on day two and day three. Black fruits and dark plums reign supreme. Dried sage and thyme shimmer alongside dried mint and some dark chocolate. Generous, it coats the mouth effortlessly. Sheets of drying tannins are laid out offering a seemingly endless drive. Moreish, some coffee grounds rise up late with cedary oak showing its hand with a respectful nod. The weight, the length, the feel - brilliant.
